Preheat the oven to 220°C/200°C fan-forced. Bring a medium saucepan of lightly salted water to the boil. Peel the potato and cut into large chunks. Finely chop the garlic. Pick and finely chop the rosemary (see ingredients). Cook the potato in the boiling water until easily pierced with a fork, 10-15 minutes. Drain the potato. Return the saucepan to a medium-high heat with a drizzle of olive oil. Cook the rosemary and garlic until fragrant, 1 minute. Add the potato, butter, milk and the salt to the pan with the rosemary. Remove from the heat, then mash until smooth. Cover to keep warm.

See Top Steak Tips (below) for extra info! While the potato is cooking, combine a drizzle of olive oil and the Nan's special seasoning in a medium bowl. Add the premium fillet steak and turn to coat. In a large frying pan, heat a drizzle of olive oil over a high heat. Add the steak to the hot pan and sear until browned, 1 minute on all sides. Transfer to a lined oven tray. Roast for 8-10 minutes for medium or until cooked to your liking. Remove the steak from the oven and set aside to rest for 5-10 minutes.

While the steak is roasting, halve the baby broccoli lengthways. Trim the green beans.

Return the frying pan to a medium-high heat with a drizzle of olive oil. Cook the diced bacon, breaking up with a spoon, until golden, 4-5 minutes. Transfer to a medium bowl. Return the frying pan to a medium-high heat, then cook the baby broccoli and green beans until softened, 5-6 minutes. Transfer the veggies to the bowl with the bacon. Season.

While the steak is resting, wipe out the frying pan, then return to a low heat. Cook the homestyle gravy, stirring, until warmed through, 5 minutes.

Slice the premium roast beef. Divide the rosemary-garlic mash and bacon greens between plates. Top with the beef. Pour over the homestyle gravy to serve.
