• Boil kettle. • Thinly slice pear into thin wedges. Finely chop garlic. • Half-fill a medium saucepan with boiling water. • Add spaghetti and cook, over medium-high heat, until ‘al dente’, 9 minutes. Reserve some pasta water (1/4 cup for 2 people / 1/2 cup for 4 people). Drain and return to pan.

• While spaghetti is cooking, heat a drizzle of olive oil in a large frying pan over a medium-high heat. • Pat salmon dry with paper towel and season both sides. • When oil is hot, add salmon, skin side down, and cook until just cooked through, 2-4 minutes each side. Transfer to a plate and cover to keep warm. • In a medium bowl combine pear, mixed salad leaves and a drizzle of balsamic vinegar and olive oil. Season to taste.

• Wipe out and return frying pan to a medium-high heat with a drizzle of olive oil. • Add garlic to pan and cook until fragrant, 1 minute. Add diced tomatoes with garlic & onion, Nan’s special seasoning and reserved pasta water and cook, stirring occasionally, until reduced, 2-3 minutes. Season. • Add chicken-style stock powder and cream (see ingredients), cook until slightly thickened, 1 minute. • Add cooked spaghetti and stir to combine.

• Flake salmon into bite-size pieces and toss through spaghetti. • Divide creamy salmon and tomato spaghetti between bowls. • Serve with pear and mixed leaf salad. Enjoy!
