
It’s time to bring everyone’s favourite entrée into the main event. Satay beef is as easy to make as it is easy to love. It's really all about the taste.

Finely chop the garlic. In a medium saucepan, melt the butter with a dash of olive oil over a medium heat. Cook 1/2 the garlic until fragrant, 1-2 minutes. Add the water and a generous pinch of salt to pan and bring to boil. Add jasmine rice, stir, cover with a lid and reduce heat to low. Cook for 12 minutes, then remove from heat and keep covered until rice is tender and all the water is absorbed, 10-15 minutes.
TIP: The rice will finish cooking in its own steam so don't peek!

While the rice is cooking, roughly chop the Asian greens. Thinly slice the carrot into half-moons. In a medium bowl, combine the Southeast Asian spice blend, a drizzle of olive oil and a pinch of salt. Add the beef strips and toss to combine.

Heat a large frying pan over a medium-high heat with a drizzle of olive oil. Cook the carrot until slightly softened, 3-4 minutes. Add the Asian greens and cook until just wilted, 1-2 minutes. Transfer to a large bowl.
TIP: Add a dash of water to help speed up the veggie cooking process.

Wipe out the frying pan, then return to a high heat with a drizzle of olive oil. Cook the beef strips in batches, until browned and cooked through, 1-2 minutes. Transfer the beef to the bowl with the veggies.
TIP: Cooking the meat in batches over a high heat helps it stay tender.

Wipe out the frying pan, then return to a medium-high heat with a drizzle of olive oil. Add the remaining garlic and cook until fragrant, 1 minute. Add the satay sauce and crushed peanuts and cook, stirring, 1 minute. Return the veggies and beef to the frying pan. Toss to coat.

Finely chop the coriander. Divide the garlic rice between bowls. Top with the satay beef and mixed veggie stir-fry. Garnish with the coriander to serve.
