Cooking Steps

1

• Preheat oven to 220°C/200°C fan-forced. Peel orange kumara and cut into wedges. • Place kumara on a lined oven tray. Drizzle generously with olive oil, season with salt and pepper and toss to coat. • Roast until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays. Little cooks: Kids can help toss the wedges.

2

• Meanwhile, slice haloumi in half crossways to get 1 thin piece per person.

3

• In a shallow bowl, combine All-American spice blend, the plain flour and salt, then season with pepper. • In a second shallow bowl, whisk the egg. • In a third shallow bowl, place panko breadcrumbs. • Dip haloumi into flour mixture to coat, then into egg, and finally in breadcrumbs. Set aside on a plate.

Little cooks: Kids can help crumb the haloumi! Use one hand for the wet ingredients and the other for the dry ingredients to avoid sticky fingers.

4

• Heat a large frying pan over medium-high heat with enough olive oil to coat the base of the pan. Cook haloumi until golden brown, 2 minutes each side. Transfer to a paper towel-lined plate.

5

• Meanwhile, add slaw mix and half the smokey aioli to a large bowl. Tear through parsley. Toss to coat and season to taste.

Little cooks: Take the lead by combining the ingredients for the slaw!

6

• Slice lemon into wedges. • Divide American-style haloumi schnitzels, kumara wedges and smokey slaw between plates. • Serve with lemon wedges and remaining smokey aioli. Enjoy!
