• Preheat oven to 240°C/220°C fan-forced. • Cut potato into fries. Place fries on a lined oven tray. • Season with salt, drizzle with olive oil, sprinkle over sesame seeds (see ingredients) and toss to coat. Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays. Little cooks: Take charge by sprinkling over the sesame seeds!
• Meanwhile, thinly slice radish and cucumber. • Place your hand flat on top of chicken breast and slice through horizontally to make two thin steaks. • In a medium bowl, combine chicken, sweet soy seasoning and a drizzle of olive oil.
• When the fries have 10 minutes remaining, in a large frying pan, heat a drizzle of olive oil over medium-high heat. • Add chicken steaks and cook until cooked through, 3-5 minutes each side (cook in batches if your pan is getting crowded). • Remove pan from heat, then add sweet chilli sauce, gently turning chicken to coat.
TIP: Chicken is cooked when it’s no longer pink inside.
• While chicken is cooking, combine cucumber, radish, mixed salad leaves, ponzu sauce (see ingredients) and the sesame oil in a large bowl. Season to taste. • Divide sweet-soy chicken, sesame fries and ponzu cucumber salad between plates. Serve with mayonnaise. Enjoy!
