Chermoula Spice Blend
• Finely chop garlic. • In a medium saucepan, heat the butter with a dash of olive oil over medium heat. Cook 1/2 the garlic until fragrant, 1-2 minutes. • Add basmati rice, the water and a generous pinch of salt, stir, then bring to the boil. • Reduce heat to low and cover with a lid. • Cook for 10 minutes, then remove from heat and keep covered until rice is tender and water is absorbed, 10 minutes.
TIP: The rice will finish cooking in its own steam so don't peek!
• While the rice is cooking, thinly slice carrot into sticks. Halve any thick stalks of baby broccoli lengthways. • In a medium bowl, combine beef mince, the egg, garlic & herb seasoning, fine breadcrumbs (see ingredients) and a pinch of salt and pepper. Using damp hands, roll beef mixture into koftas (3 per person).
• Heat a large frying pan over medium-high heat with a drizzle of olive oil. Cook carrot and baby broccoli, tossing, until tender, 5-6 minutes. Season with salt and pepper. Transfer to a bowl and cover to keep warm.
• Wipe out the frying pan, then return to medium-high heat with a drizzle of olive oil. Cook koftas, turning, until browned and cooked through, 10-12 minutes (cook in batches if your pan is getting crowded). Transfer to a plate.
TIP: The spice blend will char slightly in the pan, this adds to the flavour!
• Wipe out the frying pan, then return to medium heat. Cook chermoula spice blend and the remaining garlic until fragrant, 1 minute. • Add coconut milk, stirring, until slightly thickened, 2-3 minutes. Remove from heat.
• Stir baby spinach leaves through garlic rice. • Divide spinach rice, veggies and beef koftas between plates. • Spoon chermoula coconut sauce over koftas. Enjoy!
