Shredded Cabbage Mix
• Slice lemon into wedges.
• Heat a large frying pan over medium-high heat with a drizzle of olive oil. • Cook leek, stirring, until softened, 4-5 minutes.
• To pan with leek, add shredded cabbage, the brown sugar, vinegar and the water, stirring occasionally, until softened, 4-6 minutes.
• Transfer braised cabbage to a serving bowl. Add a generous squeeze of lemon juice. Season to taste. Serve with any remaining lemon wedges. Enjoy!
