A beloved dish from the Mediterranean is hitting your table tonight. Wrap up a bunch of flavours in a toasty flatbread, such as garlic and herb chicken, spinach and feta. The serving of oregano fries isn’t just a side dish tonight, try adding a few to the gyros to bring everything together.
The recent wet and cold weather across New Zealand has impacted our regular supply of fresh ingredients and as such, what you receive may be slightly different to what’s pictured. Don’t worry, your recipe will be just as delicious!

• Preheat oven to 240°C/220°C fan-forced. Cut potato into fries. • Place fries on a lined oven tray. Sprinkle over 1/2 the dried oregano, drizzle with olive oil, season with salt and toss to coat. • Spread out evenly, then bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
• Meanwhile, grate cucumber (see ingredients) and squeeze out any excess moisture using a paper towel or clean cloth. Finely chop garlic. • In a large frying pan, heat a drizzle of olive oil medium-high heat. Cook garlic until fragrant, 1 minute. • Transfer garlic oil to a small bowl, then add Greek-style yoghurt and cucumber and stir to combine. Season with salt and pepper and set aside.
• Cut chicken breast into 2cm chunks. • In a medium bowl, combine chicken, garlic & herb seasoning, remaining dried oregano, a pinch of salt and a drizzle of olive oil.
• Return the frying pan to medium-high heat with a drizzle of olive oil. When oil is hot, cook chicken, tossing occasionally, until browned and cooked through, 5-6 minutes. • Remove from heat, then add the honey and toss to combine.
• While the chicken is cooking, toast or grill flatbreads to your liking. • In a second medium bowl, combine baby spinach leaves and a drizzle of red wine vinegar and olive oil. Season to taste.
• Top flatbreads with tzatziki, baby spinach, chicken and some oregano fries. • Crumble over feta. • Serve with any remaining fries. Enjoy!
