• Preheat oven to 240°C/220°C fan-forced. Cut potato into fries. • Place fries on a lined oven tray. Sprinkle over 1/2 the dried oregano, drizzle with olive oil, season with salt and toss to coat. • Spread out evenly, then bake until tender, 20-25 minutes.
• Meanwhile, grate cucumber(see ingredients) and squeeze out any excess moisture using a paper towel or clean cloth. Finely chop garlic. • In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook garlic until fragrant, 1 minute. • Transfer garlic oil to a small bowl, then add Greek-style yoghurt and cucumber and stir to combine. Season with salt and pepper and set aside.
• In a medium bowl, combine diced chicken, garlic & herb seasoning, remaining dried oregano, a pinch of salt and a drizzle of olive oil.
• Return the frying pan to medium-high heat with a drizzle of olive oil. When oil is hot, cook chicken, tossing occasionally, until browned and cooked through, 5-6 minutes. • Remove from heat, then add the honey and toss to coat.
TIP: Chicken is cooked through when it's no longer pink inside.
• Meanwhile, microwave mini flourtortillas on a plate in 10 second bursts until warmed through. • In a second medium bowl, combine baby spinach leaves and a drizzle of vinegar and olive oil. Season to taste.
• Top tortillas with tzatziki, dressed baby spinach, chicken and some oregano fries. Crumble over feta (see ingredients). • Serve with any remaining fries and tzatziki. Enjoy!
