Cooking Steps

Make the Cheddar mash

  • Boil the kettle. Half-fill a medium saucepan with boiling water, then add a generous pinch of salt.
  • Peel potato and cut into large chunks.
  • Cook in the boiling water over high heat until easily pierced with a fork, 12-15 minutes. Drain and return to pan.
  • Add the butter, milk and Cheddar cheese to potato. Mash until smooth. Cover to keep warm.

TIP: Save time and get more fibre by leaving the potato unpeeled!

Cook the sausages

  • Meanwhile, heat a large frying pan with a drizzle of olive oil over medium-high heat. 
  • Cook herbed pork sausages, turning occasionally, until browned all over and cooked through, 12-15 minutes. 

TIP: Cook in batches if your pan is getting crowded! 

Toss the salad

  • While the sausages are cooking, thinly slice cucumber into rounds.
  • In a large bowl combine mixed salad leaves, cucumber, a drizzle of olive oil and vinegar. Season. 
Finish & serve

  • Divide double herbed pork sausages, Cheddar mash and cucumber salad between plates. 
  • Serve with beetroot relish. Enjoy!
