• Preheat oven to 240°C/220°C fan-forced. • Cut potato into bite-sized chunks. • Place potato and peeled pumpkin pieces on a lined oven tray. Drizzle with olive oil, then add garlic & herb seasoning and toss to coat. Spread out evenly, then roast until tender, 20-25 minutes.
• While the veggies are roasting, cut chicken breast into 2cm strips. • Combine Nan's special seasoning and a drizzle of olive oil in a medium bowl. Add chicken strips and season with salt. Toss to coat. • Transfer chicken to a second lined oven tray and bake until cooked through, 8-12 minutes. • Remove chicken from the oven, then add the honey and gently turn to coat.
• While the chicken is baking, roughly chop tomato. Thinly slice white turnip. • In a second medium bowl, combine tomato, turnip, mixed salad leaves, and a drizzle of white wine vinegar and olive oil. Season to taste.

• Divide homestyle chicken, roasted veggies and mixed leaf salad between plates. Serve with mayonnaise. Enjoy!
