• Boil a kettle of water • Heat olive oil in a frying pan over high heat • Slice capsicum • Cook capsicum for 3-4 mins • Add beef strips and seasoning and cook, tossing, until browned, 2 mins • Season
• Meanwhile, place couscous in a bowl and crumble over vegetable stock • Add boiling water (3/4 cup for 2P / 1 1/2 cups for 4P) and stir to combine • Immediately cover with a plate and leave for 5 minutes. Fluff up with a fork and set aside. • Pierce a few holes in pumpkin packet and microwave until hot and steaming, 2-3 mins • Roughly chop almonds
• Toss pumpkin and spinach & rocket with the couscous. Drizzle with oil and season • Plate up veggie couscous and top with beef, capsicum, dill & parsley mayo and almonds • Crumble over cheese
