Cooking Steps

• Add the water to a medium saucepan and bring to the boil.
• Add jasmine rice, stir, cover with a lid and reduce heat to low. 
• Cook for 12 minutes, then remove the pan from heat and keep covered until rice is tender and all the water is absorbed, 12 minutes.

TIP: The rice will finish cooking in its own steam so don't peek!

• Meanwhile, slice cucumber into half-moons.
• Thinly slice radish and fresh chilli (if using).
• Cut lime into wedges.

• When rice has 5 minutes remaining, in a large frying pan, heat a drizzle of olive oil over high heat.
• Cook pork mince, breaking up with a spoon, until just browned, 3-4 minutes. • Add sweet soy seasoning and ginger paste and cook, until fragrant, 1 minute. 
• Remove from heat and stir in sweet chilli sauce, the soy sauce and a squeeze of lime juice, until pork is coated.

• In a medium bowl, combine cucumber, radish, slaw mix, the sesame oil and a drizzle of vinegar. Season with salt and pepper to taste. 
• Divide rice and sesame slaw between bowls. Top with Thai chilli and ginger pork larb.
• Tear over mint and sprinkle over chilli. Serve with remaining lime wedges. Enjoy!
