• Boil the kettle. • Half-fill a medium saucepan with the boiling water. Add basmati rice and cook, uncovered, over high heat until tender, 12 minutes. • Drain rice, then return to the saucepan. Stir through the butter until melted. Season to taste.

• While the rice is cooking, combine hoisin sauce (see ingredients), the brown sugar, soy sauce, rice wine vinegar and sesame oil in small bowl. Set aside. • Thinly slice carrot and courgette into half-moons. Roughly chop Asian greens.

• In a large frying pan, heat a drizzle of olive oil over high heat. When oil is hot, cook beef strips in batches, until browned and cooked through, 1-2 minutes. Season, then transfer to a plate. • Return frying pan to medium-high heat with a drizzle of olive oil. Stir-fry carrot and courgette until tender, 4-5 minutes. Add Asian greens and cook until wilted, 1-2 minute. • Return beef to the pan along with hoisin sauce mixture and cook, tossing, until reduced, 1 minute.

• Divide rapid rice between bowls. Top with hoisin beef and veggie stir-fry. • Sprinkle with crushed peanuts to serve. Enjoy!
