
A happy union is celebrated between this dish and flavour. The juicy beef should be enough to have those dinner bells ringing, but we’ve gone and found the perfect partner for it in our hoisin sauce and stir-fried veggies. To seal the deal, we’ve topped it off with a sprinkling of peanuts for a nutty finish. *The recent wet and cold weather across New Zealand has impacted our regular supply of fresh ingredients and as such, what you receive may be slightly different to what’s pictured. • Boil the kettle. • Half-fill a medium saucepan with the boiling water. Add basmati rice and cook, uncovered, over high heat until tender, 12 minutes. • Drain rice, then return to the saucepan. Stir through the butter until melted. Season to taste.

• While the rice is cooking, combine hoisin sauce (see ingredients), the brown sugar, soy sauce, rice wine vinegar and sesame oil in small bowl. Set aside. • Thinly slice carrot and courgette into half-moons. Roughly chop Asian greens.

• In a large frying pan, heat a drizzle of olive oil over high heat. When oil is hot, cook beef strips in batches, until browned and cooked through, 1-2 minutes. Season, then transfer to a plate. • Return frying pan to medium-high heat with a drizzle of olive oil. Stir-fry carrot and courgette until tender, 4-5 minutes. Add Asian greens and cook until wilted, 1-2 minute. • Return beef to the pan along with hoisin sauce mixture and cook, tossing, until reduced, 1 minute.

• Divide rapid rice between bowls. Top with hoisin beef and veggie stir-fry. • Sprinkle with crushed peanuts to serve. Enjoy!
