We’re loading up soft pita bread with bacon, veggies and a generous blanket of melted Cheddar, served alongside crispy golden fries and a creamy Caesar dressing for the ultimate dipping experience.

- Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
- Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
- Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- Meanwhile, thinly slice capsicum.
- Thinly slice onion (see ingredients).
- Drain sweetcorn.
- Cut streaky bacon into 1cm pieces.
Little cooks: Don your goggles and have a go at peeling off the onion's outer layer!
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Add bacon, diced chicken, capsicum, sweetcorn and onion and cook, tossing, until golden and tender, 6-7 minutes.
- Microwave pita bread on a microwave-safe plate until warmed through, 1 minute.
- Halve pita bread and spread with tomato sugo.
- Fill with bacon veggie mixture and shredded Cheddar cheese.
- Place filled pita in a sandwich press and cook
until the cheese has melted and pita is golden,
2-3 minutes.
Little cooks: Take the lead by spreading the sauce into pita bread and adding the filling!
- Divide crispy bacon, chicken and Cheddar pita pocket melts and fries between plates.
- Serve with Caesar dressing. Enjoy!
