Preheat the oven to 240ºC/220ºC fan-forced. Cut the kumara into thin wedges.

roast the kumara

Place the kumara on a lined oven tray. Sprinkle with the All-American spice blend, drizzle with olive oil and season with salt and pepper. Toss to coat. Roast until tender and golden, 20-25 minutes.

make the lime aioli

While the kumara is roasting, roughly chop the coriander. Zest the lemon to get a pinch, then slice into wedges. In a small bowl, combine the garlic aioli, coriander, lemon zest, a squeeze of lemon juice and pinch of salt and pepper.

Transfer the kumara wedges to a serving plate. Serve with the lemon and coriander aioli and any remaining lemon wedges.
