- Cut chicken thigh into 2cm chunks.
- In a large frying pan, heat a drizzle of olive oil over high heat.
- When oil is hot, cook chicken, tossing, until browned, 14-16 minutes.
- Add Abuela's marinade and cook until combined and fragrant, 1-2 minutes.
TIP: Add a splash more water if the filling looks dry!
- Spread sliced sourdough with garlic aioli and Dijon mustard then fill with chicken and shredded Cheddar cheese.
- Heat sandwich in a sandwich press for 2-3 minutes, until cheese is melted.
- While sandwich is toasting, roughly chop cucumber and tomato.
- In a medium bowl, combine cucumber, tomato, a drizzle of white wine vinegar and olive oil. Season.
- Slice cuban chicken sandwich in half.
- Serve with cucumber salsa and corn chips. Enjoy!
