Get prepped

  • Preheat the oven to 240°C/220°C fan-forced.
  • Place prepped veggies and peeled & diced pumpkin on a lined oven tray.
Start the traybake

  • Drizzle veggies with olive oil, sprinkle with mixed sesame seeds, season with salt and toss to coat.
  • Roast until tender, 25-30 minutes.

TIP: If your oven tray is crowded, divide between two trays.

Finish the traybake

  • When veggies have 10 minutes remaining, season salmon on both sides with salt and pepper.
  • Remove baking tray from oven and place salmon on top.
  • Spoon teriyaki sauce over salmon and bake until just cooked through, 8-10 minutes. TIP: Use two oven trays if necessary.
Finish & serve

  • Divide teriyaki salmon and pumpkin traybake between plates.
  • Spoon over any remaining sauce from the tray. Enjoy!
