• Boil the kettle.
• Cut broccoli (including stalk!) into small florets. Roughly chop Asian greens. Finely chop garlic.
• In a large frying pan, heat a drizzle of olive oil over a medium-high heat.
• Cook broccoli, until tender, 4-6 minutes.
• Add Asian greens and garlic and cook, until fragrant, 1 minute. Season and transfer to a bowl.
• While veggies are cooking, half-fill a medium saucepan with boiling water.
• Cook egg noodles over a medium-high heat, stirring occasionally with a fork to separate, until tender, 4-5 minutes. Drain, rinse with warm water and return to saucepan.
• Add sesame dressing and soy sauce. Toss to combine. Cover to keep warm.
• Return frying pan to a medium-high heat with a drizzle of olive oil. When the oil is hot, crack eggs into the pan. Cook until egg whites are firm and yolks are cooked to your liking, 4-5 minutes. Transfer to a plate.
• Return frying pan to a high heat. Cook beef mince (no need for oil!), breaking up with a spoon, until just browned, 3-4 minutes.
• Add ginger paste and hoisin and cook until fragrant, 1 minute.
• Remove from heat. Add veggies and noodles. Toss to combine.
TIP: Add a splash of water if the noodles look dry!
• Divide sesame-hoisin beef noodles between bowls.
• Top with fried eggs and crispy shallots. Enjoy!
