water (for the rice)

• Finely chop garlic.
• In a medium saucepan, heat the butter with a dash of olive oil over medium heat.
• Cook half the garlic until fragrant, 1-2 minutes. Add jasmine rice, the water (for the rice) and a generous pinch of salt, stir, then bring to the boil.
• Reduce heat to low and cover with a lid.
• Cook for 12 minutes, then remove from heat and keep covered until rice is tender and water is absorbed, 10-15 minutes.
TIP: The rice will finish cooking in its own steam so don’t peek!
• Meanwhile, roughly chop Asian greens.
• Cut broccoli into small florets, then roughly chop stalk.
• Thinly slice fresh chilli (if using).
• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook broccoli, tossing, until tender, 5-6 minutes.
• Add Asian greens and remaining garlic and cook until fragrant, 1-2 minutes. Season with salt and pepper. Transfer to a bowl and set aside.
TIP: Add a dash of water to the pan to help speed up the cooking process.
• Return the frying pan to medium-high heat with a drizzle of olive oil.
• When oil is hot, add prawn & chive wontons, flat-side down, in a single layer.
• Cook until starting to brown, 1-2 minutes.
• Add the water (for the wontons) (watch out, it may spatter!) and cover with a lid (or foil).
• Cook until the water has evaporated and wontons are tender and softened, 4-5 minutes.
• While wontons are cooking, in a small microwave-safe bowl, combine oyster sauce, sweet chilli sauce and the water (for the sauce).
• Microwave in 10 second bursts, until fragrant and slightly thickened.
• Divide garlic rice and veggies between bowls.
• Top rice with prawn wontons.
• Drizzle over sticky sauce.
• Sprinkle over crispy shallots and chilli.
• Tear over coriander to serve. Enjoy!
