All-American Spice Blend
• Drain corn • Heat olive oil in a frying pan over high heat • Cook beef strips, spice blend, garlic paste and corn, tossing, until browned, 1-2 mins
• Roughly chop tomato • Slice lemon into wedges • In a bowl, combine cabbage, garlic aioli and a squeeze of lemon juice • Season and toss
• Microwave tortillas on a plate for 10 second bursts, until warmed through • Fill tortillas with slaw, BBQ beef mixture, tomato and Cheddar • Top with sour cream and torn coriander • Serve with any remaining lemon wedges. Enjoy!
