• Boil the kettle • Pour boiling water into a saucepan over high heat • Bring to boil, add tortellini and cook until ‘al dente’, 3 mins • Meanwhile, chop tomato.
• Heat olive oil in frying pan over high heat • Cook pork, breaking up with a spoon, until just browned, 3-4 mins • Reduce heat to medium. Add seasoning and garlic paste and cook until fragrant, 1 min • Add cream (1/2 bottle for 2P / 1 bottle for 4P), chicken stock and spinach. Cook until slightly thickened, 1 min.
• In a bowl, combine tomato, rocket, pumpkin seeds and dressing. Season • Add tortellini to frying pan using a slotted spoon. Season and toss • Divide pasta between plates • Top with chilli flakes (if using) and Parmesan. Tear over herbs • Serve with salad
