Cooking Steps

Bake the kumara fries

• Preheat oven to 220°C/200°C fan-forced. • Peel orange kūmara and cut into thin fries. Place kūmara on a lined oven tray. Drizzle generously with olive oil, season with salt and pepper and toss to coat. • Spread out evenly, then bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

• Thinly slice onion (see ingredients) and radish. • Thickly slice tomato. • Slice halloumi in half crossways to get 1 thin steak per person.

Caramelise the onion

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook onion, stirring, until softened, 5-6 minutes. • Add the balsamic vinegar, a splash of water and the brown sugar and mix well. Cook until dark and sticky, 3-5 minutes. Transfer to a small bowl. • Wash out and dry the frying pan.

Crumb the haloumi

• In a shallow bowl, combine the plain flour, Nan's special seasoning and a good pinch of pepper. In a second shallow bowl, whisk the egg. In a third shallow bowl, place panko breadcrumbs. • Coat halloumi first in the flour mixture, followed by the egg and finally, the panko. Set aside on a plate. • Return the frying pan to medium-high heat with enough olive oil to coat the base. Cook crumbed halloumi until golden brown, 2 minutes each side. Transfer to a paper towel-lined plate.

Toast the burger buns

• Halve burger buns, then bake directly on a wire oven rack until heated through, 2-3 minutes.

Serve up

• Spread smokey aioli over burger bun bases. • Top with mixed salad leaves, radish, halloumi, some caramelised onions and tomato. • Serve with kūmara fries and remaining aioli. Enjoy!
