Cooking Steps

1

• Place beef between two sheets of baking paper. Pound with rolling pin until slightly flattened (this ensures it’s extra tender!) • In a bowl, combine beef, Mumbai spice blend and a drizzle of olive oil • Heat oil in a frying pan over high heat. Cook beef for 5-6 mins or until cooked to your liking • Transfer to a plate to rest

2

• Drain chickpeas (1/2 tin for 2P/ 1 tin for 4P) • Wipe out pan, return to medium-high heat with drizzle of oil. Add chickpeas and spice blend and toss until warmed through, 2 mins. Transfer to a bowl • Return pan to medium-high heat. Drizzle flatbreads with oil. Cook flatbreads (1 for 2P / 2 for 4P) until golden and warmed through, 1-2 mins each side • Roughly chop cucumber. Thinly slice radish

3

• In a second bowl, combine mixed salad leaves, cucumber, radish, dressing and a drizzle of oil. Season • Slice steak. Plate up salad, chickpeas and steak • Top with mayo, nuts and torn coriander • Serve with flatbreads
