Cooking Steps

Cook the rice
1
  • Drain sweetcorn. In a medium saucepan, heat the butter with a dash of olive oil over medium heat.
  • Cook corn until fragrant, 1-2 minutes. Add basmati rice, the water and a generous pinch of salt, stir, then bring to the boil.
  • Reduce heat to low and cover with a lid.
  • Cook for 10 minutes, then remove from heat and keep covered until the rice is tender and the water is absorbed, 10 minutes.

TIP: The rice will finish cooking in its own steam so don't peek!

Little cooks: Older kids can help out with the can opener under adult supervision.

Prep the veggies
2
  • Meanwhile, thinly slice tomato into wedges. Chop broccoli (including stalk!) into small florets.

Little cooks: Help wash and toss the veggies!

3
  • In a large bowl, combine beef mince, fine breadcrumbs, the egg, Tex-Mex spice blend and a pinch of salt.
  • Using damp hands, roll heaped spoonfuls of beef mixture into small meatballs (4-5 per person). Transfer to a plate.

Little cooks: Join the fun by helping combine the ingredients and shaping the mixture into meatballs! Make sure to wash your hands well afterwards.

Cook the meatballs
4
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Add meatballs, turning, until browned and cooked through, 8-10 minutes (cook in batches if your pan is getting crowded).
Steam the broccoli
5
  • While meatballs are cooking, add broccoli and a splash of water to a microwave-safe bowl, then cover with a damp paper towel.
  • Microwave broccoli on high until just tender, 2-4 minutes.
  • Drain broccoli, then return to the bowl and cover to keep warm.
Finish & serve
6
  • Divide corn rice, Mexican beef meatballs and vibrant veggies between plates.
  • Serve with BBQ sauce. Enjoy!

Little cooks: Add the finishing touch by drizzling over the BBQ sauce!
