- Roughly chop cos lettuce.
- Cut the halloumi into 1cm-thick slices.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook halloumi until golden brown, 1-2 minutes each side. Season with a pinch of Tex-Mex spice blend.
- Meanwhile, microwave pita bread on a microwave-safe plate for 20 seconds, until warmed through.
- In a large bowl, combine cos with a drizzle of olive oil and white wine vinegar. Season to taste.
