  • Roughly chop cos lettuce.
Cook the halloumi

  • Cut the halloumi into 1cm-thick slices.
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook halloumi until golden brown, 1-2 minutes each side. Season with a pinch of Tex-Mex spice blend.
Heat the pita bread

  • Meanwhile, microwave pita bread on a microwave-safe plate for 20 seconds, until warmed through.
  • In a large bowl, combine cos with a drizzle of olive oil and white wine vinegar. Season to taste.

  • Halve pita bread and fill with some sour cream, cos and Tex-Mex halloumi. Serve with corn chips and any remaining cos. Enjoy!
