• Preheat oven to 240°C/220°C fan-forced.
• Cut potato into fries. Place on a lined oven tray.
• Drizzle with olive oil, sprinkle with garlic & herb seasoning, season with salt and toss to coat.
• Spread out evenly, then bake until tender, 20-25 minutes.
Little cooks: Kids can help sprinkle over the seasoning and toss the fries.

• Meanwhile, grate beetroot.
• In a large frying pan, heat a good drizzle of olive oil over medium-high heat. Cook beetroot, the balsamic vinegar and brown sugar until softened, 2-3 minutes.
• Add the water and cook, stirring occasionally, until reduced, 5-6 minutes. Season to taste. Transfer to a bowl.

• While the beetroot relish is cooking, finely chop garlic.
• Slice halloumi horizontally to get 1 piece per person.
• In a shallow bowl, add the plain flour and All-American spice blend. In a second shallow bowl, whisk the egg. In a third shallow bowl, place panko breadcrumbs.
• Dip halloumi slices into flour mixture, followed by egg and finally in panko breadcrumbs. Set aside on a plate.
Little cooks: Join the fun by helping combine the ingredients and crumbing the halloumi!

• Wash and dry the frying pan, then return to medium-high heat with enough olive oil to coat the base.
• Cook halloumi until golden brown, 2 minutes each side. Set aside on a paper towel-lined plate.

• Meanwhile, thinly slice tomato into rounds.
• Halve burger buns and bake directly on a wire oven rack until heated through, 2-3 minutes.

• Spread bun bases with smokey aioli, then fill with beetroot relish, mixed salad leaves, a halloumi and tomato.
• Serve with herbed fries and any remaining salad. Enjoy!
