• Boil the kettle • Heat a frying pan over high heat with olive oil. Cook beef mince and soffritto mix, breaking up with a spoon, until browned, 3 mins • Add seasoning, stock, tinned tomatoes and a drizzle of water and cook, until reduced 3-5 mins
• Pour boiling water into a saucepan over medium-low heat • Simmer ravioli until ‘al dente’, 3 mins • Using a slotted spoon, transfer ravioli to frying pan
• In a bowl, combine rocket and olive oil. Season to taste • Plate up ravioli and sauce • Top with Parmesan and rocket
