• Drain and chop pineapple • In a bowl, combine diced chicken, seasoning and a drizzle of olive oil • Heat a frying pan over high heat with a drizzle of olive oil. Cook chicken and pineapple, tossing occasionally, until browned and cooked through, 5-6 mins • Add sweet chilli sauce and toss to coat, 1 min
• Meanwhile, roughly chop cucumber. Slice lemon into wedges • In a second bowl, combine slaw, cucumber, a squeeze of lemon juice and a drizzle of oil. Season to taste
• Microwave tortillas on a plate in 10 second bursts, until warm • Spread smokey aioli over tortillas • Fill tortillas with slaw, chicken and pineapple • Tear over coriander and serve with remaining lemon wedges
