
In our version of the beloved Turkish street food, large wraps are stuffed with spinach, garlic, mozzarella and tangy feta and grilled to cheesy perfection for the ultimate hand-held feast. Serve alongside a zingy fresh radish and mixed salad leaf salad.

• Finely chop onion (see ingredients) and garlic.
• Thinly slice radish.
• Zest lemon to get a pinch, then slice into wedges.
• Roughly chop baby spinach leaves.
Little cooks: Don your goggles and have a go at peeling off the onion’s outer
layer!

• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook onion until tender, 3-5 minutes.
• Add garlic and cook until fragrant, 1 minute.
• Transfer to a large bowl, then add spinach, lemon zest, grated mozzarella
and the egg. Crumble in cow’s milk feta (see ingredients), then stir to
combine. Season with pepper.

• Place large wraps on a microwave-safe plate and cover with a damp paper
towel. Microwave on high, until warmed through and softened, 1 minute.
• Place wraps, rough-side down, and spoon spinach filling over one half of
each wrap, then fold over to form a half moon.
• Heat gözleme in a sandwich press for 2-3 minutes, until golden brown and
cheese is melted.
TIP: Warming the wraps through helps them roll easily without tearing!

• In a medium bowl, combine mixed salad leaves, radish, a drizzle of olive oil
and a good squeeze of lemon juice. Season to taste with salt and pepper.
• Divide Turkish feta and spinach gözleme between plates.
• Serve with lemony radish salad and any remaining lemon wedges. Enjoy!
