Cooking Steps

Cook the risoni
1

• Boil the kettle.
• Half-fill a large saucepan with boiling water and add a generous pinch of salt.
• Cook risoni over high heat until ‘al dente’, 7-8 minutes.
• Drain risoni, then return the saucepan with a drizzle of olive oil.

• Meanwhile, finely chop garlic.
• Trim and roughly chop green beans.
• In a large bowl, combine pork mince, half the garlic and a drizzle of olive oil. Season with salt and pepper.

Cook the veggies

• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook soffritto mix, stirring occasionally, until softened, 4-5 minutes.
• Add tomato paste, classic roast seasoning, green beans and remaining garlic.
• Cook, stirring until fragrant, 1-2 minutes.

Bring it all together

• Add cooked risoni to veggie mixture. Cook until slightly thickened, 1-2 minutes.
• Remove from heat, then stir through the butter and baby spinach leaves. Generously season with salt and pepper. Transfer to a large bowl.

Cook the pork mince

• Wipe out the frying pan, then return to medium-high heat with a drizzle of olive oil.
• Cook pork mince, tossing, until pink and starting to curl up, 4-5 minutes. Remove pan from heat.

Finish & serve

• Divide veggie-packed risoni between bowls. Top with garlic pork mince to serve. Enjoy!
