Cooking Steps

Preheat the oven

  • Preheat oven to 220°C/200°C fan-forced.
Get prepped

  • Chop broccoli (including stalk!) into small florets. 
  • Slice onion into thick wedges.
  • Thinly slice spring onion. 
  • Peel and cut kumara into large chunks.
Make the traybake

  • Add broccoli, onion & kumara to an oven tray lined with baking paper. Drizzle with olive oil and season.
  • In a medium bowl, combine pork steak, Mexican fiesta spice blend and a drizzle of olive oil.
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • When oil is hot, cook pork steaks until cooked through, 3-4 minutes each side (cook in batches if your pan is getting crowded). Transfer to a plate, cover and rest for 5 minutes.

TIP: If your oven tray is crowded, divide between two trays.

Finish & serve

  • Divide pork steak & vibrant veg bake between bowls. Top with mashed avocado and sour cream. Garnish with spring onion to serve. Enjoy!
