
This Father’s Day, we’re bringing together the best of the land and sea. For the ‘surf’, you’ll cook juicy prawns with garlic until pink and perfectly tender. For the ‘turf’, there’s tender beef rump seasoned with tomato & herb seasoning. Crispy roast potatoes and a fresh capsicum salad complete this feast, served with a zesty parsley and Dijon sauce. • See ‘Top Steak Tips!’ (below left). Preheat oven to 240°C/220°C fan-forced.
• Cut potato into bite-sized chunks.
• Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
• Roast until tender, 20-25 minutes.

• Meanwhile, finely chop parsley and garlic.
• Thinly slice capsicum (see ingredients) and radish.
• Roughly chop green butter lettuce (see ingredients).
• In a medium bowl, combine parsley, Dijon mustard (see ingredients), a small drizzle of red wine vinegar, a generous pinch of salt and sugar and the olive oil (1 tbsp per person).

• In a second medium bowl, add beef rump, tomato & herb seasoning and a drizzle of olive oil.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• When oil is hot, cook the beef for 4-5 minutes each side for medium-rare, or until cooked to your liking.
• Transfer to a plate to rest.

• While the steak is resting, wipe out the frying pan and return to medium-high heat with a drizzle of olive oil.
• Cook peeled prawns and garlic, tossing, until pink and starting to curl up, 3-4 minutes.

• In a large bowl, combine capsicum, radish, lettuce and balsamic & olive oil dressing.
• Season to taste with salt and pepper.

• Slice steak.
• Divide prime beef, roast potatoes and capsicum salad between plates.
• Top steak with garlic prawns.
• Spoon over parsley-Dijon sauce to serve. Enjoy!
