• Preheat oven to 240°C/220°C fan-forced. Cut potato into fries. • Place on a lined oven tray. Season with salt, drizzle with olive oil and toss to coat. • Spread out evenly, then bake until tender, 20-25 minutes.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook baby broccoli until tender, 5-6 minutes. • Add Asian greens and remaining garlic, and cook until fragrant, 1-2 minutes. • Remove pan from heat, add oyster sauce and toss to combine. Transfer to a serving plate and cover to keep warm.

• Wipe out the frying pan and return to medium-high heat with a drizzle of olive oil. When oil is hot, cook pork in batches, tossing, until golden, 2-3 minutes. • Remove pan from heat, return all pork to the pan and add plum sauce, tossing to coat

• Place bao buns on a plate with a small splash of water (just a small splash so they stay fluffy!). • Cover with cling wrap or a microwave-safe bowl. Microwave on high, 1 minute. Set aside to cool slightly, 1 minute.

• Gently halve bao buns and spread with mayonnaise. Fill with sticky plum pork, cucumber and spring onion. • Serve with potato fries and oyster sauce greens. Enjoy!
