• Prick a few holes in pumpkin packet. Microwave until hot and steaming, 3 mins • Chop tomato. Thinly slice cucumber • In a bowl, combine sweet chilli sauce and a drizzle of olive oil
• Heat oil in a frying pan over high heat • Cook beef and sweet soy seasoning, tossing, until browned, 1-2 mins
• Add tomato, cucumber and mixed salad leaves to sweet chilli dressing. Season and toss • Plate up salad and pumpkin. Top with beef and peanuts • Serve with garlic aioli
