• Boil the kettle. Trim and halve baby broccoli • Heat olive oil in a frying pan over high heat • Cook pork, breaking up with a spoon, until just browned, 4-5 mins

• Meanwhile, heat a saucepan over medium-high heat. Half-fill with boiling water • Cook udon noodles until tender, 3-4 mins • In last min of cook time, gently stir noodles with a fork to separate • Drain, rinse and set aside

• To pan with pork, add baby broccoli and cook until tender, 5-6 mins • Add roasted pumpkin, garlic paste and cook until fragrant, 1 min • Add coconut milk, seasoning, ponzu and cook until slightly reduced, 1-2 mins • Add drained noodles. Toss to combine • Plate up pork and veggie noodles • Tear over coriander and garnish with cashew mix to serve
