• Heat frying pan over medium-high heat with enough olive oil to coat base of pan. Cook chicken until golden and cooked through, 3-4 mins each side. Season and set aside • Meanwhile, halve panini and toast or grill to your liking
• Thinly slice tomato, avocado (1/2 for 2P / 1 for 4P) and cucumber
• In a bowl, combine mixed salad leaves, cucumber and balsamic dressing. Season • Spread panini with some truffle mayonnaise, top with chicken, avocado and tomato. • Serve with salad. Enjoy!
