• Heat frying pan over medium-high heat with enough olive oil to coat the base of the pan • Cook chicken until golden and cooked through, 3-4 mins each side. Season and set aside • Meanwhile, halve panini and toast or grill to your liking
• Thinly slice tomato, cucumber and avocado (1/2 for 2P / 1 for 4P)
• In a bowl, combine mixed salad leaves, cucumber and balsamic dressing. Season • Spread panini with some truffle mayonnaise. Top with chicken, avocado and tomato • Serve with salad
