- Chop broccoli (including stalk!) into small florets.
- Thinly slice courgette into sticks.
- Slice lemon into wedges. Finely chop garlic.
- Remove John dory fillets from packaging and pat dry with paper towel. Season fish on both sides with salt and pepper.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
Cook broccoli and courgette, tossing until tender, 6-7 minutes (cook in batches if needed). Add garlic and cook, until fragrant, 1 minute.
- Transfer to a bowl and allow to cool slightly.
TIP: Add a dash of water to the pan to help speed up the cooking process.
- When the veggies are done, wipe out frying pan and return to medium-high heat with a drizzle of olive oil. When oil is hot, cook fish in batches until just cooked through, 5-6 minutes each side. In the last minute of cook time, add lemon pepper seasoning, gently turning fish to coat.
- While the fish is cooking, to a small microwave-safe bowl, add a pinch of chilli flakes (if using), the honey and a generous squeeze of lemon juice and microwave in 10 second bursts, until warmed through and fragrant. Set aside.
TIP: White fish is cooked through when the centre turns from translucent to white.
TIP: Add extra oil between batches if needed so the fish doesn't stick to the pan.
- To the bowl with cooled veggies, add baby spinach & rocket mix, a good squeeze of lemon juice and a drizzle of olive oil. Season to taste.
- Divide zesty dory and charred broccoli salad between plates. Drizzle over hot honey. Serve with any remaining lemon wedges. Enjoy!
