Cooking Steps

Bake the fries
1
  • Preheat oven to 240°C/220°C fan-forced.
  • Cut potato into fries.
  • Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
  • Bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

Get prepped
2
  • Meanwhile, slice fresh chilli in half lengthways, carefully removing any seeds. Set aside.
  • Place your hand flat on top of chicken breast and slice through horizontally to make two thin steaks.
  • In a medium bowl, fine breadcrumbs, classic roast seasoning, the egg and a pinch of salt and pepper. Dip chicken into the mixture to coat.
Cook the chicken
3
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook chicken steaks until cooked through, 3-6 minutes each side (cook in batches if your pan is getting crowded).
  • Meanwhile, halve burger buns and bake directly on a wire oven rack until heated through, 2-3 minutes. Transfer to a paper towel-lined plate.

TIP: Add extra oil if needed so the crumbed chicken doesn't stick to the pan!
TIP: The chicken is cooked when it is no longer pink inside.

Finish & serve
4
  • Spread each burger bun with the mayonnaise.
  • Top with chicken, chilli jam and some mixed salad leaves.
  • Skewer chilli halves vertically on toothpicks, then push two toothpicks through the top of each bun so they resemble devil horns (remove toothpicks before eating!). Serve with fries. Enjoy!

Little cooks: Help build the burgers by layering the buns, patties, chilli jam and salad. An adult can add the devil horns.
