Cooking Steps

Bake the fries
1

• Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
• Place fries on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
• Bake until tender, 20-25 minutes.

• Meanwhile, thinly slice cucumber (see ingredients) into rounds. 
• Cut halloumi into 1cm-thick slices.

Cook the halloumi

• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook halloumi until golden brown, 1-2 minutes each side. Set aside on a paper towel-lined plate.
• Meanwhile, in a large bowl, combine mixed salad leaves, cucumber, julienned carrot, grated Parmesan cheese, and a drizzle of white wine vinegar and olive oil. Season to taste. 

Finish & serve

• Divide halloumi, oven-baked fries and Parmesan salad between plates to serve. Enjoy!
