Cooking Steps

Make the fragrant rice
1

• Finely chop garlic.
• In a medium saucepan, heat the butter with a dash of olive oil over medium heat. Cook half the garlic until fragrant, 1-2 minutes.
• Add the water and a generous pinch of salt to pan and bring to the boil.
• Add jasmine rice, stir, cover with a lid and reduce heat to low. Cook for 12 minutes, then remove from heat and keep covered until rice is tender and water is absorbed, 10-15 minutes. 

TIP: The rice will finish cooking in its own steam so don't peek!

• Meanwhile, thinly slice tomato into rounds. 
• Thinly slice radish.
• Cut halloumi into bite-sized chunks.
• In a medium bowl, combine halloumi, garlic & herb seasoning and a drizzle of olive oil. 

Make the garlic yoghurt

• In a large frying pan, heat a drizzle of olive oil and the remaining garlic over medium-high heat. Cook until fragrant, 1 minute.
• Transfer garlic oil to a small bowl.
• Add Greek-style yoghurt to the garlic oil and stir to combine. Season to taste with salt and pepper. 

Cook the halloumi

• When the rice has 5 minutes remaining, return the frying pan to high heat with a drizzle of olive oil. 
• When oil is hot, cook halloumi, tossing occasionally, until golden brown, 2-4 minutes.
• Remove pan from heat, then add the honey and toss to coat.

Toss the salad

• Meanwhile, in a second medium bowl, combine tomato, radish, mixed salad leaves and a drizzle of white wine vinegar and olive oil. Season to taste. 

Finish & serve

• Divide garlic rice between bowls.
• Top with herby halloumi and tomato salad.
• Dollop with garlic yoghurt sauce to serve. Enjoy!
