Cooking Steps

Bake the pita chips

  • Preheat oven to 200°C/180°C fan-forced.
  • Roughly chop pita bread. Place on a lined oven tray. Toss with olive oil and season with salt.
  • Bake until lightly golden and crispy, 8-10 minutes.

  • While pita chips are baking, roughly chop tomato. Finely slice radish.
  • Roughly chop cos lettuce. Slice avocado in half, scoop out flesh and roughly chop.
  • Cut halloumi into 1cm slices.
  • In a small bowl add garlic dip and a splash of water, stir to combine.

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat. Add halloumi and cook until golden brown, 1-2 minutes each side.
  • Remove pan from the heat, add the honey and turn halloumi to coat.
Serve up

  • In a large bowl, combine cos lettuce, tomato, avocado, radish, pita chips, a drizzle of olive oil and balsamic vinegar. Season to taste.
  • Divide Middle Eastern fattoush salad between bowls and top with honey-glazed halloumi. Tear over mint and drizzle over garlic dip to serve. Enjoy!
