Cooking Steps

Cook the noodles

  • Boil the kettle. Half-fill a medium saucepan with boiling water.
  • Cook egg noodles over medium-high heat, stirring occasionally with a fork to separate, until tender, 4-5 minutes.
  • Drain, rinse and return to pan with a drizzle of olive oil.
Get prepped

  • Meanwhile, thinly slice carrot into half-moons. Slice brown onion into thin wedges. Roughly chop Asian greens. Finely chop garlic.
  • In a medium bowl, combine prawn, sweet soy seasoning and a drizzle of olive oil.
Cook the prawns

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook peeled prawns, tossing, until pink and starting to curl up, 3-4 minutes. 
  • Transfer to a plate and cover to keep warm.
Start the laksa

  • Wipe out frying pan and return to medium-high heat with a drizzle of olive oil.
  • Cook carrot and onion until tender, 4-5 minutes.
  • Add laksa paste and garlic and cook until fragrant, 1 minute.
Bring it all together

  • Stir in coconut milk, fish sauce & rice vinegar mix, the water and soy sauce. Bring to the boil.
  • Add Asian greens, stirring until wilted and combined, 1-2 minutes.
  • Season to taste.
Finish & serve

  • Divide egg noodles between bowls. Top with prawn.
  • Pour over laksa broth and garnish with crispy shallots. Enjoy!
