Cooking Steps

Get prepped

• Preheat oven to 220°C/200°C fan-forced.
• Chop broccoli (including stalk!) into small florets.
• Slice onion into thick wedges.
• Thinly slice spring onion (see ingredients).
• Peel and cut kūmara into large chunks.

Make the traybake

• Place broccoli, onion and kūmara on a lined oven tray. 
• Drizzle with olive oil, season with salt, toss to coat and spread out evenly.  

Add the chicken

• SPICY! This spice blend is hot! Add less if you’re sensitive to heat. Add chicken 
thigh to the tray, then drizzle with more olive oil and sprinkle over Mexican 
Fiesta spice blend. 
• Bake until golden and cooked through, 25-30 minutes.
TIP: If your oven tray is crowded, divide between two trays. 
TIP: Chicken is cooked through when it is no longer pink inside.

Finish & serve

  • Divide chicken & vibrant veg bake between bowls. Top with mashed avocado and sour cream. Garnish with spring onion to serve. Enjoy!
