•Large Frying Pan

Cooking Steps

1
  • Roughly chop cos lettuce.
  • Slice avocado in half, scoop out flesh and roughly chop.
  • Thinly slice tomato into wedges.
  • Thinly slice onion. Finely chop garlic. Slice lemon into wedges.
2
  • Drain and rinse black beans.
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook onion until tender, 4-5 minutes.
  • Add black beans, garlic and half the Mexican Fiesta spice blend and cook until fragrant, 1 minute.
  • Remove pan from heat, add a splash of water and gently crush the beans with a potato masher or fork. Transfer to a bowl and cover to keep warm.

TIP: Add a splash of water if the beans look dry.

3
  • While beans are cooking, place your hand flat on top of chicken breast and slice through horizontally to make two thin steaks.
  • In a medium bowl, combine chicken breast steaks, remaining spice blend, a drizzle of olive oil and a pinch of salt.
  • Wipe out frying pan and return to medium-high heat.
  • Cook chicken steaks until cooked through, 3-5 minutes each side (cook in batches if your pan is getting crowded).

TIP: The chicken is cooked when it is no longer pink inside.

4
  • In a large bowl, combine cos lettuce, avocado, tomato, a drizzle of olive oil and a good squeeze of lemon juice.
  • Slice chicken.
  • Divide Fiesta chicken, fried black beans and avocado salad between plates. Tear over coriander to garnish and serve with any remaining lemon wedges. Enjoy!
