Stir through your al dente spaghetti and finish it off with a sprinkling of nutty Parmesan cheese.

• Boil the kettle. Pick and roughly chop rosemary. • Half-fill a large saucepan with water, add a generous pinch of salt, then bring to the boil over high heat. • Cook spaghetti in boiling water until ‘al dente’, 9 minutes. Reserve some pasta water (1/2 cup for 2 people // 1 cup for 4 people), then drain and return to pan.

• Meanwhile, in a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook beef mince and soffritto mix, breaking up with a spoon, until browned and tender, 3-4 minutes.

• Add Aussie spice blend and rosemary and cook until fragrant, 1-2 minutes. • Reduce heat to medium-low and add tinned cherry tomatoes, Worcestershire sauce, chicken-style stock powder, the brown sugar and butter. Simmer until reduced and thickened, 3-4 minutes. Season to taste. TIP: Add a splash of water if the pasta looks dry.

• Add spaghetti and reserved pasta water.to pan and toss to combine. Season to taste. • Divide beef ragu spaghetti between bowls. • Sprinkle with grated parmesan cheese to serve. Enjoy!
