Cherry Tomatoes
Halve cherry tomatoes. Thinly slice cucumber into rounds. Slice lemon into wedges.
Heat a large frying pan over medium-high heat. Toast slivered almonds, tossing, until toasted, 3-4 minutes. Set aside.
In a large bowl, add tomatoes, cucumber, salad leaves, a squeeze of lemon juice and the balsamic & olive oil dressing. Season with salt and pepper. Toss to coat.
Transfer cherry tomato salad to a serving bowl. Crumble over feta (see ingredients). Drizzle with balsamic glaze. Sprinkle over toasted almonds to serve. Enjoy!
