• Add the water to a medium saucepan and bring to the boil. • Add jasmine rice, stir, cover with a lid and reduce heat to low. • Cook for 12 minutes, then remove pan from heat and keep covered until rice is tender and all the water is absorbed, 10-15 minutes. TIP: The rice will finish cooking in its own steam so don't peek!
• Meanwhile, chop broccoli (including stalk! See ingredients) into small florets. Thinly slice carrot into sticks. • Cut plain tofu (see ingredients) into 2cm chunks and pat dry with paper towel. • Meanwhile, chop broccoli (including stalk! See ingredients) into small florets. Thinly slice carrot into sticks. • In a medium bowl, combine the plain flour, sweet soy seasoning and tofu.
• In a large frying pan, heat a generous drizzle of olive oil over medium-high heat. • When the oil is hot, cook tofu, turning occasionally, until golden, 5-7 minutes.
• When rice has 5 minutes remaining, add broccoli and carrot and a splash of water to a microwave-safe bowl, then cover with a damp paper towel. • Microwave veggies on high until just tender, 2-4 minutes. • Drain veggies, then transfer to a serving plate, season and cover to keep warm.
• In a small heatproof bowl, combine Teriyaki sauce and a splash of water. Microwave in 30 second bursts, until heated through. • To pan with rice, add the sesame oil, vinegar and sugar and stir, until rice is coated.
• Bring everything to the table. Build your own plate with cheat's sushi rice, tofu, steamed broccoli, Teriyaki sauce and crispy shallots. • If you've selected an add-on bundle, serve with deluxe Japanese salad. Enjoy!
