• Preheat oven to 240°C/220°C fan-forced. • Cut potato into bite-size chunks. Place on a lined oven tray. Add a drizzle of olive oil, season and toss to coat. Roast until tender, 20-25 minutes.
If you received the beef eye round, cook the beef steak for 3-4 minutes on each side (depending on thickness), or until cooked to your liking.
• While pork is resting, roughly chop tomato. Slice cucumber into half-moons. • In a bowl, combine tomato, cucumber, rocket leaves, a drizzle of white wine vinegar and olive oil. Season to taste.
• Add romesco sauce to tray with potatoes and toss to combine. • Divide garlicky pork steak, romesco roast potatoes and mixed salad between plates. Serve with mayonnaise. Enjoy!
